Dairy Free Bacon Wrapped Jalepenos

Delicious and dairy-free is a phrase I have been come to known by. These vegan cream cheese, bacon wrapped jalepenos are so dang good, and a breeze to put together. They’re baked instead of fried – and dare I say, they’re better than any I’ve tried. I made these for a family event a while back and got in “trouble” for not making enough… this tends to be a frequent complaint in my family, lol.

I love how light these are. You can adjust the spicyness to your liking – just by deciding how many of the jalepeno seeds you want to leave in! Just a note, too small of a jalepeno and they’ll be difficult to stuff. Too big of a jalepeno and the bacon won’t wrap around as well. A healthy medium size is a safe way to go.

Ingredients:
6 jalepeno peppers (this recipe is so easy to double or triple depending how many you are feeding)
about a 1/2 cup (4 oz) vegan cream cheese – Trader Joe’s is my absolute favorite that I use in so many things
6 pieces of thinly sliced bacon, each piece cut in half
non-stick spray or parchment paper
salt and pepper
garlic powder

Preheat oven to 400F and line a baking sheet with parchment paper, or aluminum foil sprayed with non-stick cooking spray. I almost always opt for parchment paper.

Start by halving your jalepenos long ways, going in with a paring knife – remove the ribs and the seeds. I like to leave some seeds because most of the people in my family enjoy a bit of heat. Plus the vegan cream cheese is made with coconut milk, adding a subtle sweetness that balances out the heat of the peppers.

In a bowl, mix together your  vegan cream cheese, salt, pepper and garlic powder. Fill each jalepeno half with some of the cream cheese mixture.

Then carefully take your sliced bacon strips, and wrap one around each jalepeno half (its recommended that you use a toothpick to secure, or the edges with peel upwards while baking).

Align your wrapped jalepeno poppers on our baking sheet, ensuring that none is touching another. Bake for 20-25 mins, until bacon crisps. Serve as soon as able, or the jalepenos will begin to lose their texture.
